Spianata is a typical cured meat from southern Italy, especially the region of Calabria; its shape resembles a half moon and its name is given by the firmness it takes on through pressure. It is produced by mincing pork meat with the addition of spices, and of paramount importance among the latter is chili pepper, which distinguishes it from other domestic cured meats.
